Their olives are harvested early in October, yielding vibrant green fruits that result in oil with low acidity and peroxide levels, while boasting a high percentage of polyphenols. With exclusively manual harvesting methods, olives are swiftly transported to the mill for pressing. After meticulous decanting or filtering, the oil is bottled under nitrogen into dark glass bottles, preserving its freshness and flavour.
