Spring/Summer Menu: Fancy a bite? Get your hands on our AB Homemade Beef Burger recipe from our new Spring/Summer Menu!

18 Apr 2018

Now that we’ve got the warm weather we’re smelling the smokey aroma of BBQs everywhere, and what better dish to cook than our AB Homemade Beef Burger! It's the perfect Spring/Summer dish! So, what are you waiting for? Get your grill lit and follow our step by step recipe.

What you’ll need:

  • 500g braising steak or beef mince
  • A pack of bacon rashers
  • 1x white onion
  • 1x handful chopped parsley
  • 1 X teaspoon chopped garlic
  • 1x teaspoon dried onion
  • Pinch paprika
  • Pinch chili powder
  • Pinch nutmeg
  • Pinch ground coriander
  • Pinch cayenne
  • 1 teaspoon cooking oil
  • 8 iceberg leaves
  • 1 X beef tomato sliced
  • Handful slices pickled gherkins

Once you’ve gathered your ingredients it’s time to prep. The lovely Joe, one of our Café Bar chefs, volunteered to show us how it’s done.

Start by finely dicing your onion, remember big chunks of onion in a burger isn’t to everyone’s taste, so the finer the better. Then it’s onto the fresh coriander.

Now here’s the fun part, if you’re using braising steak you’ll have to mince it down, Joe can be seen doing this below and you’ll need a meat mincer to do this. However, if you’re using beef mince you can skip this step. We’re proud to say all our quality meat is sourced from our local butcher, N. Carter of Macclesfield.

Once your beef mince is prepped, mix the mince well with the onion, parsley, garlic, dried onion, paprika, chili, nutmeg, coriander and cayenne pepper.

When you’ve got the spices well and truly mixed in, it’s time to form the burger patties. Using the newly seasoned mince, form 4 equally shaped balls – don’t worry, they don’t have to be neat!

Using the flat of your hand, gently squash the mince balls down to around a 1.5cm thickness.

Now that you’ve created your burger patties, it’s time to season and get cooking. The amount of pepper or salt you season with is completely up to you but please remember it’s easy to add more than to take away!

Your method of cooking can differ, as we all know the British weather has a mind of its own, one-minute sunshine and sunglasses the next rain and grey clouds. So, a BBQ isn’t always possible. Thankfully we have a fully equipped kitchen as a backup, so you’ll see below that Joe used a griddle pan.

As with any beef dish, how much you cook your burger is up to you. When a customer orders our AB Burger, they can request to have it rare, medium or well done.  Just remember to turn your patties halfway through, no one likes a burnt burger!

Once your burger is cooked to your liking, it’s time to add the extras! Place 2 rashers of cooked bacon on top with a slice of cheddar cheese. Allow the cheese to melt before removing from the pan.

Place the iceberg lettuce, tomato and a handful of picked gherkins onto a toasted brioche bun. Then lay the burger, bacon and cheese on top. Use a wooden skewer to keep the burger together.

Pair the burger with some chunky chips and our AB burger sauce. We’re afraid that recipe is top secret! *zips lips and throws away the key*

Enjoy!
